Table for 2025: 10 new restaurants to book this year

This year promises a feast of exciting new restaurants, from Ecuadorian pastry queen Pía Salazar’s latest venture to award-winning Chef Ton’s new Penang outpost.

1. Marmo Bistro, Hong Kong

Set within Hong Kong’s illustrious Rosewood Hotel and under the culinary eye of chef de cuisine Giovanni Galeota, Marmo Bistro will bring classic Parisian bistro elegance to the Pearl of the Orient.

With glossy, marble-clad interiors, Marmo offers a stylish spot to enjoy timeless dishes – think soul-soothing French onion soup, decadent foie gras torchon and côte de boeuf. 

Plenty of thought has been put into the compact, but well-rounded wine list too, and cocktail fans will swoon over the creations of Rosewood Hong Kong’s director of bars, Bob Louison, who’s dreamed up a line-up of aperitivo-style cocktails with a Parisian twist, from the zesty Suze Tonic to the Martini a la French, with vodka, French vermouth and bitters.

2. Sood by Chef Ton, Penang

Bangkok and Malaysia’s culinary capital, Penang, have long been connected through their shared flavours and heritage. And with the launch of Sood by Chef Ton on the island’s culinary mile of Georgetown, that connection is set to grow even stronger.

Dubbed ‘A Celebration of Culinary Heritage and Modern Dining’, the new venture sees Ton, known for the acclaimed Le Du in Bangkok, take over a stunning 150-year-old restaurant space.

The goal? To offer a fresh take on centuries-old flavours from both Bangkok and Penang, fusing the best of each region’s gastronomic traditions.

3. Gaia, Miami

Following its success in Dubai, Gaia is set to bring shareable Greek dishes to Miami’s South of Fifth district, an exclusive and affluent South Beach community. The brainchild of British-Nigerian chef Izu Ani, it’s already a favourite of A-listers like Naomi Campbell and Idris Elba.

The new Miami location is set to offer the same simple-but-stellar Greek dishes, with Gaia’s philosophy that sharing plates elevate any meal. One standout will be the restaurant’s signature ‘Ice Market’, where fresh Mediterranean fish and seafood are displayed daily and cooked to order, guaranteeing every bite is as fresh and flavour packed as possible.

4. Mareida, London

Chilean chef Carolina Bazán has been making waves on the international culinary scene for years, not least since being crowned Latin America’s Best Female Chef in 2019

This year, Londoners will be clamouring for a seat at the highly anticipated opening of Mareida on Great Portland Street, which Bazán is launching with her wife, sommelier Rosario Onetto, and co-founder Prenay Agarwal.

Known for Santiago’s Ambrosia, Bazán is unveiling a “playful menu” inspired by Chile’s diverse landscapes and the city’s Pan-American migrant communities.

The sea will be the menu’s cornerstone, featuring fresh seafood and fish, alongside regional gems like Atacama and Patagonian berries, plus a beautifully curated wine list, heavily focused on Chilean selections.

5. The Sundays, Hamilton Island by Josh Niland

Tucked between Queensland and the Great Barrier Reef, a tropical island will soon be home to The Sundays, Josh Niland’s latest opening.

Already drawing visitors with its jaw-dropping natural beauty, the new hotel is generating a lot of buzz. Australia’s hottest chef – famed for his expert fish butchery – is planning a menu centred on his signature whole-fish approach, championed at the Sydney hotspot Saint Peter

The 59-room hotel and restaurant, located on Catseye Beach, promises a laidback spot for families and food lovers alike. With four children of their own, the Nilands have clearly designed the experience with families in mind, making it ideal for those with small fry in tow.

6. Bar Valette, London

If you’ve followed Isaac McHale since The Clove Club opened a decade ago, you won’t want to miss the chef’s latest venture, Bar Valette. Here, the food will draw on McHale’s love of casual French and Spanish cuisine, inspired by the pintxos bars of the Basque Country and hearty sharing plates.

With Erin Jackson Yates stepping in as head chef, McHale’s concept will take the top-tier produce from The Clove Club and serve it up in a simpler, more relaxed way.

The result will be a casual menu packed with moreish snacks like devilled crab tartlets, while diehard Clove Club fans can look forward to the much-loved buttermilk fried chicken in pine salt.

7. Noraneko, Caracas

José Monsalve’s path to the kitchen was unconventional – business school, photography, a Master’s in artistic photography, classical sculpture in Barcelona and even time spent in the Amazon.

But it was through food that he found his true calling. His new ramen restaurant, Noraneko, aims to introduce Venezuelans to umami, while giving the noodle dish a South American reboot, using Japanese garnishes like kombu and katsuobushi paired with Caribbean fish. The menu will change daily, offering only one ramen at a time, with the next dish revealed exclusively via social media.

8. Damian, Lima
Estimated opening: April

Moving from a 16th-century monastery in the Andes to a nightclub is quite the leap, but head chef Jorge Muñoz, of Cusco restaurant Oqre, is doing just that. Damian, set to open in April, “will be a game-changer in the bar and nightlife scene of the region,” according to Casa Lumbre, the company behind the operation.

Located in the heart of Lima’s San Isidro district, the restaurant will feature a fusion of Mediterranean and Pacific Ocean produce. Designed as a destination space, it will start as a restaurant and evolve into a club as the night unfolds. The space will have a massive grill in one corner of the party area, five food outlets, caviar carts and a speakeasy bar that promises a totally different vibe, featuring a back alley for street food and the after party.

9. Stelma, Quito

Pía Salazar has been on a whirlwind since being named Latin America’s Best Pastry Chef in 2022. Her restaurant, Nuema, co-founded with her husband Alejandro Chamorro, has skyrocketed to success, ranking No.11 on Latin America’s 50 Best Restaurants 2024.

Now, the pair are set to open Stelma in Quito, a “dynamic gastronomic space” where local ingredients are the stars, spiking old-school Ecuadorian recipes with modern twists.

As co-head chefs, Salazar and Chamorro will craft dishes unapologetically rooted in their heritage, such as Ecuadorian-style noodle soup, crispy pork belly marinated in Andean spices with sour oranges and achiote, plus Salazar’s killer pineapple curd.

10. Cypsèle, Paris

Paris’ Île Saint-Louis is set to welcome Cypsèle, the debut solo venture from Marcin Król, whose star-studded résumé includes Boragó in Chile, Paris’ Maison and Noma.

Król’s aim is to create a hyperseasonal menu, using fresh produce from microfarms across France. Diners can choose between a four or seven-course tasting menu, where Krol serves proteins whole, cooked using traditional techniques over a wood-fired rotisserie oven.

Expect crowd-pleasing dishes like sole stuffed with raw shrimp and sweetbreads baked in sourdough. To drink, expect an unbeatable selection curated by Quentin Loisel, head sommelier of Le Jules Verne.
