Milos is deeply rooted in the culinary culture and traditions of Greece. LLM writer Georgie Bentley-Buckle visits the family-owned restaurant from the acclaimed group situated on Regent Street.
Unlike other culinary customs, it isn’t quite as easy to locate notable Greek restaurants in the UK. Should this be on your agenda, make your way to 1 Regent Street in London’s St James’s and to the home of Greek dining extraordinaries, Estiatorio Milos.
Found within the former British Columbia House since first opening in 2015, the vast wooden doors which open onto the capital’s iconic street offer an impressive welcome into a restaurant that aims to inspire English palates on the nuances of this Mediterranean cuisine. Founded in 1979, by Greek-born-and-raised restaurateur Costas Spiliadas, Milos is the family-owned and internationally acclaimed Greek restaurant empire, offering a taste of the country in the centre of the big smoke.
Milos is deeply rooted in the culinary culture and traditions of Greece. Endeavouring to offer an experience that is both luxurious but authentic too, here the menu lets the freshness of the ingredients speak for themselves.
With a focus built upon simple preparation, the restaurant’s focus on dishing up exceptionally sourced ingredients is showcased with every bite: from local fishermen and farmers throughout Greece and the Mediterranean, and each of the local markets in which they operate.

As you’d expect, fish is the headline act. The variety includes plates of raw fish: notably the Mediterranean hunter fish which can be enjoyed as both sashimi and in tartare form. Meanwhile, another signature dish is the selection of fish baked in sea salt, such as loup de mer, milokopi and rofos. In keeping with the ancient Greek tradition of curing fish there is also the adventurous range of delicacies from hot smoked eel or gently cured roe of the renowned messolonghi.
A must is the signature ‘Milos Special’: a tower of lightly fried courgette with aubergine, kefalograviera cheese and tzatziki. Fill your table with this along with the grilled Mediterranean octopus with Santorini fava, the côte de boeuf and lamb chops with roasted vegetables and potatoes.
It’s not just the Greek food on the menu at Milos London, but the wine too. One of the best places in town to sample the finest Greek labels, a good starting point is the Assyrtiko: a crisp and refreshing white from Santorini on the extensive Greek wine list. Meanwhile, cocktails include the refreshing mastiha ocean, made with enosis mastiha, Belvedere, crème de menthe, elderflower cordial and lime juice; or the lost garden cocktail – a botanical, yet fresh and fruity drink that includes metaxa 12 stars, cherry heering and bepi tosolini saliza amaretto.

Costas Spiliadas, the founder and mastermind behind the Greek restaurant group, is still as involved as he was on the day in 1979 when he opened his first restaurant in Montreal. With his family in tow to ensure he runs his restaurant to the standard of his meticulous eye (rooted in detail and perfection) the ethos of the brand embodies a commitment to preserving and celebrating Greek food and wine.
His Greek dishes are plated up in an architecturally impressive space that has helped establish Milos as a leader in Greek dining in London. The space is filled with beautiful marble, light wood, and Grecian urns which complement the formal elegance of the circa 1915 Grade II listed building.
Meanwhile, crafted from two-hundred-year-old Dinesen heart oak is the wooden floor, set against a marble staircase. Overlooking the ground floor dining room, the mezzanine is framed by the raw seafood bar, along with the dessert and cheese counter, showcasing an array of artisan Greek cheeses.

Milos currently has eleven restaurants, with additional locations to open this year.
From the flagship in Montreal, to other cities around the world, Costas Spiliadas and his team have dished up the finest Greek delicacies in New York, Miami, Athens, Dubai, Los Cabos, Singapore and Toronto.
Particularly championing Greek wines is also the Milos Wine Bar located in New York City’s Hudson Yards, Xenodocheio Milos – the five-star gastronomy-forward hotel in Athens, plus Milos at Sea, a small fleet of yachts in the Greek islands that bring Milos’ renowned hospitality to Costas’s home, where it all started.
