After Eight, Calgary

Ski season is about to get lot more stylish when luxurious new speakeasy After Eight launches in Calgary this year.
Hailing from the stable of Darren Maclean, founder of Calgary’s acclaimed Shokunin, Nupo and Eight, this intimate spot will be accessed via a hidden door off the lobby at the Alt Hotel Calgary East Village.
The backdrop will be opulent, to say the least, complete with a vaulted gold ceiling and a bar top made from ‘old-growth’ trees to complement the intricate cocktail menu. Inspired by ‘Satoyama’ – the stretch of land between the mountains and sea – drinks will combine foraged ingredients and fine spirits to serve up a creative taste of the country’s rich landscape.
Think the likes of the Noble Grove – Bridgeland Distillery Taber Corn Berbon Spirit, mountain syrup and pine tree tips – and Water Moss, a refreshing blend of watermelon and moss-infused gin.
To make the whole place super-exclusive, the bar will only open after the service at Eight – the adjoining restaurant – has finished (10pm-2am).
1920, Dubai

Set on the 52nd floor of ICD Brookfield Place in Dubai, 1920 is a glamorous throwback to its namesake golden era with vibrant entertainment, sophisticated drinks and opulent interiors.
The concept is courtesy of D.ream, the global restaurant group behind the likes of Coya, Amazonico and Zuma, and spans 4,000-square foot of Art Deco-inspired glamour with a 46-metre-high ceiling and 78-seater bar – the undisputed jewel in the crown with spectacular views of the city skyline.
The menu is no less impressive, from vintage champagnes to innovative cocktails, while live performance and vinyl DJs encourage you to linger ‘til late.
De Vie, Paris

Opening on Rue Saint-Sauveur in the bustling Parisian neighbourhood of Montogueil, De Vie is a dual-concept bar-slash-restaurant from Alex Francis and Barney O’Kane (former bar director and bartender of Little Red Door – No.59 in the 51-100 ranking of The World’s Best Bars 2024) along with rising superstar chef Adam Purcell.
To champion French spirits and produce, the more casual De Vie bar can be found on one side with the smarter Comptoir De Vie on the other with both focusing on storytelling, innovation, sustainability and inclusivity.
Rather excitingly, the team will cultivate experiences that transform the way you connect with what’s in your glass and on your plate. At the bar, there’ll be eight signature cocktails – classics like a martini and kir, amongst others – with core ingredients that change over the seasons; while in the restaurant, there will be five drinks to complement the food.

The team behind Thunderbolt in Los Angeles, a regular feature and high-flier on the list of North America’s 50 Best Bars, is bringing its signature style of sustainable sips grounded in laid-back Californian sensibilities to Denver’s buzzy Sunnyside neighbourhood.
The soon-to-open casual hangout will build upon the successes of its sister venue, centred around a drinks programme created with hours of preparation and cutting edge technique behind the scenes, while retaining accessibility for drinks enthusiasts and casual cocktail enjoyers alike.
This means its aperitivo-inspired menu, with options such as a clarified strawberry mistelle or simple negroni, will deliver all of the flavour without any of the fuss.
Florería Atlántico, Washington DC

Hailing from Buenos Aires – where the speakeasy bar has spearheaded a sustainable approach to drinking and tells stories about Old World migrants through cocktails – Florería Atlántico will open a venue in Georgetown, Washington DC around June this year.
At the time of writing, the cocktail menu is still very much a work in progress, but it will focus on seasonality, flavour, history and locality, while the interior design brings together exposed brick, rustic wood, gleaming copper, blue velvet and black iron to spectacular effect. The ‘skeleton’ of a sea monster that will be suspended over the bar is sure to be an Instagram sensation.
Bar Julius, Sydney

Landing this January is the ultimate hotel lobby bar: Bar Julius. Offering a warm and welcoming hub within The Eve Hotel Sydney, found at the crossroads of Redfern and Surry Hills, it will be a bustling all-day spot that caters to everything from early-morning coffee to late-night cocktails, all served alongside a menu of European comfort-food classics (steak frites, a signature burger and oysters with champagne).
Decor-wise, it’s all about the double-height windows facing Baptist Street through which beams of light stream in all day, while a colourful Barrisol ceiling, luxe materials like leather, marble and wood, eye-catching artwork and a 100-seat bar complete the look.
At the latter, you can expect the likes of a silver-service martinez, a Sticky Date Espresso Martini, and a generously portioned local negroni, alongside an extensive wine list packed with local producers and European classics.
Penicillin, Shanghai
Opening early 2025
Penicillin, the laboratory-inspired bar championing sustainable and local ingredients in Hong Kong, will launch its second site in Shanghai at the beginning of 2025 – exact date still to be confirmed.
That’s good news for fans of the first bar’s industrial aesthetic – all concrete walls, treetop tables, reclaimed lighting and apothecary bottles – as well as its clever twists on classic drinks, as there’ll be more of the same (and then some) as founder Agung Prabowo and his team will undoubtably push the envelope even further with their hotly-anticipated encore.

No less than five venues are being opened by celebrity chef Gordon Ramsay at 22 Bishopsgate, the tallest building in London, including what will be the UK’s highest restaurant (sorry, Duck and Waffle) in the form of Lucky Cat – the Pan-Asian drinking den and Robata grill inspired by 1930s Tokyo with locations in Mayfair, Manchester and Miami.
With 360-degree views from the 60th floor, there will be a stylish roof terrace for soaking up the skyline as well as sipping on cocktails such as the new Sukiyaki Wester Django, a sake-based (and rather scientific) concoction that combines sake, amburana, blueberry agrodolce, tequila, whey and calamansi. Bookings are open now, but you’ll have to wait until February to ascend from the city below.
Paradox, Mumbai

While details are thin on the ground, sources say that ‘post-modern cocktail bar’ will open in Mumbai early this year from the team behind Masque, where head mixologist Anukush Gamre has made a name for himself behind the bar.
There will be more of the same here through experimenting with ingredients, techniques and flavours in a collection of classic and signature cocktails with a twist. The 50-seat bar itself, meanwhile, will be designed by Ashiesh Shash and will be attached to a 30-seat restaurant serving up global cuisine.
The Consul, Bangkok

Set amongst the buzz of Sukhumvit this April will be The Consul, inspired by Bangkok’s rich heritage as the epicentre of culture and commerce. Housed in a former warehouse, the sleek and sophisticated spot by Terry Kim of Alice Cheongdam in Seoul will serve as a modern-day embassy of good hospitality, welcoming patrons for fine-dining and artisanal cocktails.
The space is enormous, split across two storeys and comprising no less than 350 seats with dedicated areas for the public, members, dining, drinking and nightly performances.
While not much has been revealed about the cocktails, it’s believed the menu will be inspired by the 1920s with sips that celebrate the jazz era’s glitz and glamour.
Draft Land, Seoul

Seoul is about to get a seriously sweet spot this April in the form of Draft Land, the third outpost of the eponymous cocktail bar from Taiwanese mixology maestro Angus Zou.
Hot on the heels of its hip and happening siblings in Hong Kong and Singapore, where both bars have been doing a roaring trade in cocktails on tap and with live DJ nights, this newcomer will add the same vibrancy to the fashionable Apgujeong neighbourhood. Expect punchy drinks, from a spin on a sangria and a whisky fizz to a twist on an afternoon tea, all of which you can try before you buy.
